  • 1/2 cup olive oil
  • 1 cup diced onion
  • 2 cloves minced garlic
  • 1 cup diced carrot
  • 1 cup diced celery
  • 1 cup diced potato
  • 15 ounces drained cannellini beans
  • 14.5 ounces canned diced tomatoes (drained)
  • 1 quart beef broth
  • 8 ounces ditalini or elbow macaroni
  • 1 cup grated Parmesan cheese

Instructions

  1. Heat 1/4 cup of olive oil in a heavy-bottomed pot over medium heat. Add the onion and garlic, sautéing until translucent.
  2. Stir in the carrots, celery, and potatoes. Cook for about 10 minutes until softened.
  3. Add the tomatoes and drained beans, followed by cold water and beef broth. Season with salt and pepper.
  4. Bring to a boil, then reduce heat to low and add a Parmesan rind. Simmer for 45-60 minutes.
  5. Remove the rind, partially blend the soup to your desired consistency using an immersion blender.
  6. Return to boil, add pasta, and cook according to package instructions (about 10 minutes).
  7. Stir in butter and grated Parmesan before serving.
