  • 2 tbsp olive oil
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook penne pasta according to package instructions until al dente. Reserve about 1/2 cup of pasta water before draining.
  2. In a large skillet over medium heat, add olive oil. Once hot, sauté sliced cremini mushrooms for about 5 minutes until golden brown. Stir in minced garlic and cook for an additional minute.
  3. Add fresh spinach to the skillet and stir until wilted. Pour in heavy cream and mix well.
  4. Reduce heat to low, add drained penne pasta to the skillet, then stir in grated Parmesan cheese, Italian seasoning, salt, and black pepper. Gradually add reserved pasta water until desired consistency is reached.
