  • 4 chicken drumsticks
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 1 ½ cups rice (uncooked)
  • 1 ½ cups chicken stock
  • 1 ¼ cups water
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¾ teaspoon salt
  • Black pepper
  • Oil spray
  • Fresh chopped parsley (for garnish)

Instructions

  1. Preheat your oven to 350°F.
  2. Spread the chopped onion in a baking dish and dot with butter. Bake for about 15 minutes until onions begin to brown.
  3. In a bowl, mix paprika, thyme, garlic powder, onion powder, salt, and black pepper. Rub this mixture all over the chicken drumsticks.
  4. Remove the baking dish from the oven and spread uncooked rice over the onions. Pour in chicken stock and water; add minced garlic and stir.
  5. Place seasoned chicken on top of the rice mixture. Cover with foil and bake for 30 minutes.
  6. Uncover, lightly spray oil over chicken, and bake until fully cooked.
  7. Garnish with fresh parsley before serving.
