  • 1/4 cup olive oil
  • 1 medium sweet onion, (diced)
  • 4 medium carrots, (diced)
  • 12 oz mushrooms, (diced)
  • 4 celery ribs, (diced)
  • 4 cloves garlic, (minced)
  • 1 tsp paprika
  • 1 tbs Italian herb seasoning
  • salt and pepper (to taste)
  • 2 tbs tomato paste
  • 1/2 cup dry apple vinegar
  • 7 cups low sodium vegetable or chicken broth
  • 1½ lb cheese tortellini
  • 1/2 cup grated parmesan cheese
  • 1/2 cup heavy cream
  • 3 handfuls kale, (chopped)

Instructions

  1. In a large pot, heat olive oil over high heat. Add diced carrots and onion; sauté for 3 minutes.
  2. Stir in mushrooms and celery; sauté until softened, about 3 minutes.
  3. Add minced garlic; cook for an additional 30 seconds.
  4. Sprinkle paprika, Italian herb seasoning, salt, pepper, and tomato paste into the pot; stir well.
  5. Pour in apple vinegar and broth; bring to a boil, cover, and simmer for 20 minutes until carrots are tender.
  6. Add cheese tortellini; boil for 5 minutes until cooked through.
  7. Reduce heat, stir in heavy cream and chopped kale until wilted.
