  • ½ lb lean ground beef
  • 3 cups fresh baby spinach
  • 910 uncooked lasagna noodles
  • 7 cups beef or chicken broth
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded parmesan cheese
  • 1 cup fresh ricotta cheese
  • ½ cup yellow onion, chopped
  • 3 garlic cloves, minced
  • 3 tbsp tomato paste
  • ¼ tsp red pepper flakes
  • ¼ tsp salt (more to taste)
  • ¼ tsp black ground pepper
  • ¼ tsp garlic powder
  • ½ tsp crushed, dried oregano
  • ½ tsp dried thyme
  • 1 tsp olive oil

Instructions

  1. Brown the ground beef in a large Dutch oven over medium-high heat for 8–10 minutes. Drain excess grease and set aside.
  2. In the same pot, sauté chopped onions until translucent, then add minced garlic and tomato paste for enhanced flavor.
  3. Stir in seasonings and broth, return the meat to the pot, and let simmer.
  4. Add broken lasagna noodles and cover; simmer until noodles are cooked.
  5. Stir in fresh spinach, mix in parmesan cheese, and dollop with ricotta mozzarella mixture before serving.
