  • 4 cups chicken broth
  • 2 cups shredded rotisserie chicken
  • 2 cups heavy cream
  • 1 cup frozen peas
  • 2 bay leaves
  • 16.3 oz refrigerated biscuit dough
  • Kosher salt
  • fresh cracked pepper
  • fresh chopped parsley

Instructions

  1. Melt butter in a large pot over medium-high heat.
  2. Add diced onion, sliced carrots, and celery; season with salt and pepper. Sauté for about 8 minutes until softened.
  3. Cut biscuit dough into quarters and toss with flour to prevent sticking.
  4. Stir in minced garlic, Italian seasoning, sage, and thyme; cook for an additional minute.
  5. Add flour to the pot and stir until combined; then deglaze with chicken broth.
  6. Mix in shredded chicken, heavy cream, frozen peas, and bay leaves; bring to a simmer.
  7. Gently place biscuit pieces on top of the soup without submerging them.
  8. Cover the pot and reduce heat to low; let simmer for about 15 minutes until dumplings are cooked through.
  9. Season with salt and pepper to taste; garnish with fresh parsley before serving.
