  • 1 ½ lbs sirloin or ribeye steak, cut into bite-sized cubes
  • 12 oz cheese tortellini (fresh or refrigerated)
  • 6 tbsp unsalted butter
  • 4 cloves garlic, minced
  • Juice of 1 lemon
  • ½ cup grated Parmesan cheese
  • 1 tsp Cajun seasoning (or to taste)
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • Salt & black pepper, to taste
  • 2 tbsp olive oil
  • ½ tsp red pepper flakes (optional, for heat)
  • 1 tsp Dijon mustard
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • ½ cup reserved pasta water

Instructions

  1. Cook tortellini in salted boiling water according to package directions until tender. Reserve ½ cup pasta water and drain.
  2. Season steak bites with Cajun seasoning, smoked paprika, garlic powder, salt, and pepper. Heat olive oil in a skillet over medium-high heat and sear steak for 2–3 minutes per side until browned; set aside.
  3. In the same skillet, melt butter over medium heat. Sauté minced garlic until fragrant. Stir in red pepper flakes (if using), Dijon mustard, and lemon juice.
  4. Return tortellini and steak to the skillet, tossing to coat in sauce. Add reserved pasta water as needed for consistency and mix in Parmesan cheese until creamy.
  5. Serve hot with extra herbs and Parmesan on top.
