  • 200 g noodles (reshteh or gluten-free)
  • 1 bunch fresh herbs (parsley and cilantro)
  • 1 medium onion
  • 2 cloves garlic
  • 1 teaspoon turmeric
  • 6 cups vegetable broth
  • 1 cup vegan yogurt (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté chopped onion until translucent, then add minced garlic and cook until fragrant.
