  • 2 boxes white cake mix (plus required ingredients)
  • 1 pack lime jello
  • 1 cup shredded coconut
  • 1 teaspoon coconut extract
  • Key lime frosting
  • Green sprinkles
  • Toasted coconut
  • Zest of 2 limes

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare the mini bundt pan with non-stick cooking spray.
  2. Prepare the cake mix according to package instructions in two separate bowls.
  3. Mix in shredded coconut and coconut extract into one bowl; add lime jello into the other.
  4. Fill each bundt well with alternating layers of coconut batter and lime batter.
  5. Bake for about 22 minutes until a toothpick comes out clean. Allow cooling before removing from the pan.
  6. For frosting, microwave key lime frosting until runny, then drizzle over cooled cakes.
