  • 6 cups mixed salad greens
  • 1 ripe avocado (diced)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ¼ red onion (thinly sliced)
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. In a skillet over medium heat, heat olive oil. Season shrimp with smoked paprika, garlic powder, salt, and pepper. Cook for 2-3 minutes on each side until pink and opaque.
  2. In a large mixing bowl, combine salad greens, cherry tomatoes, cucumber, avocado, red onion, and parsley. Gently toss to mix.
  3. In a small bowl or jar, whisk together olive oil, lemon juice, Dijon mustard, oregano, honey/maple syrup (if using), salt, and pepper until blended.
  4. Drizzle dressing over the salad mixture and add cooked shrimp on top. Toss gently to combine.
