  • 8 oz rotini or penne pasta
  • 1 cup cherry tomatoes
  • 1 cup cucumber
  • 1/2 cup red onion
  • 1/2 cup bell pepper
  • 1 cup feta cheese
  • 1/2 cup Kalamata olives
  • Fresh parsley
  • Fresh basil
  • 1/3 cup olive oil
  • 1/4 cup red apple vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic

Instructions

  1. Cook the pasta in salted boiling water until al dente (8–10 minutes). Drain and rinse under cold water.
  2. In a mixing bowl, combine cooked pasta with cherry tomatoes, cucumber, red onion, bell pepper, feta cheese, Kalamata olives, parsley, and basil.
  3. In another bowl, whisk together olive oil, red apple vinegar, Dijon mustard, minced garlic, salt, and pepper.
  4. Pour the dressing over the salad mixture and gently toss to coat.
  5. Cover and refrigerate for at least 30 minutes to enhance flavors before serving.
