  • 15 oz chickpeas
  • 1.5 tbsp olive oil
  • 3/4 tsp salt
  • 3/4 tsp garlic powder
  • 3/4 tsp onion powder
  • 3/4 tsp herbs de provence
  • 1 large sweet potato, peeled and cut into 1/2-inch cubes
  • 1.5 tbsp olive oil
  • 3/4 tsp salt
  • 3/4 tsp cinnamon
  • 1/2 tsp cumin
  • 1 lb ground chicken
  • 1 cup ricotta
  • 1 egg
  • 1/2 cup panko
  • 1 shallot, finely chopped
  • 3 green onions, sliced
  • 3/4 cup cilantro, chopped
  • 1/2 cup dill, chopped
  • 1.5 lemon zest
  • 3/4 tsp salt
  • 3/4 tsp pepper
  • 2 tbsp olive oil
  • 1.25 cup yogurt
  • 1.5 cup basil, chopped
  • 3/4 cup dill, chopped
  • 1.5 lemon juice
  • 1.5 tbsp olive oil
  • 1.5 tbsp honey
  • 1 jalapeño, seeded and finely minced
  • 3 cloves garlic, freshly pressed
  • Salt and pepper to taste
  • 4 cups kale, stemmed and torn into 1-inch pieces

Instructions

  1. Preheat oven to 400°F (200°C). Toss chickpeas with olive oil and seasonings; spread on a baking sheet. In another bowl, coat sweet potato cubes with oil and spices; spread on a separate baking sheet. Roast for 25-30 minutes until golden brown.
  2. In a mixing bowl, combine ground chicken, ricotta, egg, panko breadcrumbs, chopped shallot, green onions, herbs, lemon zest, salt, and pepper. Form into meatballs.
  3. Heat olive oil in a pot over medium heat; cook meatballs until browned and cooked through (10-12 minutes).
  4. Whisk yogurt with chopped herbs, lemon juice, olive oil, honey, minced jalapeño, garlic; season to taste.
  5. Assemble by layering kale in bowls and topping with roasted veggies and meatballs; drizzle with yogurt sauce.
