  • 1 tablespoon olive oil
  • 1 small red onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • ¼ cup kalamata olives, sliced
  • 2 teaspoons dried oregano
  • ½ teaspoon ground cumin
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley
  • Lemon wedges for serving

Instructions

  1. In a large skillet over medium heat, add olive oil and cook the ground beef until browned, about 6 to 8 minutes. Drain excess fat if necessary.
  2. Add sliced red onion and minced garlic; sauté for 2 to 3 minutes until fragrant.
  3. Stir in diced zucchini and red bell pepper; cook for another 5 to 6 minutes until tender yet crisp.
  4. Add halved cherry tomatoes, sliced kalamata olives, oregano, cumin, paprika, salt, and pepper; stir well and cook for an additional 2 to 3 minutes.
  5. Remove from heat, garnish with chopped parsley and feta cheese (if using), and serve warm with lemon wedges.
