  • 1/2 cup panko breadcrumbs
  • 1 large egg
  • 1/2 cup crumbled feta cheese
  • 1/4 cup finely diced red onions
  • 1/4 cup finely diced sun-dried tomatoes
  • 1/4 tsp dried dill
  • 1/4 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground chicken, panko, egg, feta, onions, sun-dried tomatoes, dill, oregano, garlic powder, and salt. Mix until well incorporated.
  3. Roll the mixture into approximately 15 small meatballs and arrange them on a parchment-lined baking sheet.
  4. Bake for 25-30 minutes or until cooked through and the internal temperature reaches 165°F (74°C).
  5. Allow the meatballs to rest for two minutes before serving with tzatziki sauce.
