  • 1/2 cup panko breadcrumbs
  • 1/4 cup crumbled feta cheese
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • Salt and pepper to taste
  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber, squeezed dry
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill
  • 1 clove garlic, minced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the ground chicken, panko breadcrumbs, feta cheese, red onion, dill, parsley, egg, garlic, lemon zest, salt, and pepper. Mix gently until just combined.
  3. Lightly oil your hands and roll the mixture into 1.5-inch meatballs; you should yield about 18-20 meatballs.
  4. Arrange the meatballs on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown and cooked through (165°F / 74°C).
  5. Alternatively, heat olive oil in a skillet over medium-high heat and cook the meatballs for about 8-10 minutes until browned on all sides.
