  • 4 medium Carrots
  • 1 cup Green Lentils
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic (minced)
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • 1/2 teaspoon Chili Flakes or Harissa
  • Salt & Pepper to taste
  • 1/4 cup Toasted Almonds
  • 1/4 cup Fresh Mint Leaves

Instructions

  1. Rinse lentils under cold water. In a medium pot, cover with water and boil. Reduce heat to simmer for about 20 minutes until tender; drain excess water.
  2. Peel and grate carrots into thin strips.
  3. In a large mixing bowl, combine cooked lentils and grated carrots along with minced garlic, olive oil, lemon juice, cumin, paprika, chili flakes (or harissa), salt, and pepper.
  4. Just before serving, gently fold in toasted almonds and fresh mint leaves.
