  • 2 Tablespoons extra virgin olive oil
  • 1 cup chicken broth
  • 1/4 cup chopped pecans
  • 3 Tablespoons pure maple syrup
  • 1 Tablespoon Dijon mustard
  • 1 Tablespoon apple cider vinegar
  • 2 teaspoons gluten-free reduced-sodium tamari
  • 1/4 teaspoon dried rosemary

Instructions

  1. 1. Season gluten-free flour with salt and pepper in a shallow dish. Dredge each chicken thigh in flour and place on a plate.
  2. 2. Heat olive oil in a cast iron skillet over medium-high heat. Sear the chicken thighs until golden brown, about 1-2 minutes per side.
  3. 3. In a bowl, whisk together chicken broth, maple syrup, chopped pecans, Dijon mustard, apple cider vinegar, tamari, and rosemary.
  4. 4. Remove skillet from heat; add the broth mixture and return to heat. Bring to a simmer then nestle the chicken back into the sauce.
  5. 5. Cover loosely with foil and simmer for about 10 minutes until chicken is cooked through and sauce has thickened.
