  • 50 g Brown Sugar
  • 50 g White Sugar
  • 1 large Egg
  • 1 tsp Vanilla Extract
  • 0.5 tsp Baking Soda
  • 0.5 tsp Salt
  • 150 g All-Purpose Flour (consider using gluten-free flour if needed)
  • 1 cup Mangoes (diced, fresh or frozen)
  • 2 tbsp White Sugar
  • 1 cup Sweet Rice (do not substitute with regular rice)
  • 0.5 cup Coconut Milk
  • 2 tbsp Sweetened Condensed Milk (can omit for dairy-free version)

Instructions

  1. Start by rinsing the sweet rice under cold water until it runs clear, then soak it for at least 6 hours.
  2. After soaking, drain and steam the sweet rice for 20-25 minutes until tender.
  3. In a mixing bowl, cream together the butter and sugars until fluffy, then beat in the egg and vanilla.
  4. In another bowl, mix baking soda, salt, and flour; gradually add to the wet mixture until combined.
  5. Fold in the diced mangoes and combine with cooked sweet rice mixed with coconut milk.
  6. Preheat the oven to 350°F (180°C) and bake rounded tablespoons of dough on a parchment-lined baking sheet for 12-15 minutes.
