  • 1 cup barbecue sauce (e.g., Sweet Baby Ray's)
  • 2 lbs lean ground beef
  • 30 Ritz Crackers
  • 2 oz onion soup mix
  • 2 eggs
  • 3 cups macaroni noodles
  • 2 cups milk
  • 10.5 oz condensed cheddar cheese soup
  • 4 cups shredded mozzarella and cheddar cheese blend

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix ketchup and barbecue sauce; set aside.
  3. In a large bowl, combine ground beef, crushed Ritz crackers, onion soup mix, eggs, and half of the sauce mixture; mix well.
  4. Press the meatloaf mixture into a greased baking dish; top with remaining sauce.
  5. Bake for 30 minutes.
  6. Cook macaroni noodles according to package instructions; drain.
  7. In another bowl, whisk milk and cheddar cheese soup; add salt, pepper, garlic powder, onion powder, and macaroni; fold in shredded cheese.
  8. Pour the macaroni mixture over the baked meatloaf; sprinkle with remaining cheese.
  9. Return to the oven for an additional 17-20 minutes until the cheese is melted.
