  • 1 lb rotini pasta
  • 16 oz Italian salad dressing
  • 8 oz mozzarella cheese
  • 1 cup diced chicken
  • 1/2 cup mini turkey pepperoni
  • 1/2 cup sliced olives
  • 1 cup halved grape tomatoes
  • 1/4 cup chopped flat-leaf parsley
  • Salt & pepper to taste

Instructions

  1. Cook the rotini according to package directions until al dente. Drain and cool.
  2. In a large mixing bowl, combine cooled rotini, mozzarella cheese, diced chicken, mini turkey pepperoni, sliced olives, halved grape tomatoes, and chopped parsley. Mix with half of the Italian dressing.
  3. Cover and refrigerate for at least one hour to allow flavors to meld.
  4. Before serving, stir in the remaining Italian dressing.
