Ingredients

Scale
  • 1 ½ cups fresh lemon juice
  • 2 cups white sugar
  • 4 eggs
  • 1 cup unsalted butter
  • 3 containers mascarpone cheese (8 oz each)
  • 2 cups heavy cream
  • Crisp ladyfingers

Instructions

  1. Prepare the lemon curd by combining lemon juice, sugar, eggs, and salt in a saucepan. Cook over medium heat, stirring constantly until thickened. Strain into a bowl, stir in butter and refrigerate.
  2. Make the lemon syrup by boiling sugar, lemon peel, and juice until dissolved. Cool and discard the peel.
  3. Whip heavy cream and powdered sugar until stiff peaks form. Mix mascarpone cheese with lemon zest and fold in the whipped cream along with three-quarters of the chilled lemon curd.
  4. In a baking dish, layer half of the ladyfingers brushed with syrup, followed by half of the lemon curd and mascarpone mixture. Repeat layers and top with reserved lemon curd. Chill for at least 6 hours or overnight before serving.
