  • 2 tbsp lemon zest
  • 3 tbsp culinary lavender
  • 3/4 cup salted butter (room temperature)
  • 3 large eggs (room temperature)
  • 3 tbsp lemon juice
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup whole milk (room temperature)
  • 1.5 cups powdered sugar (sifted)
  • 3 to 4 tbsp whole milk (for glaze)
  • 1/2 tsp lavender extract
  • Optional: purple food coloring

Instructions

  1. Preheat the oven to 350°F (180°C). Grease a 9×5-inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together flour and baking powder; set aside.
  3. Combine sugar, culinary lavender, and lemon zest in a large bowl. Rub the lemon zest into the mixture.
  4. Cream butter into the sugar mixture until light and fluffy. Add eggs one at a time, mixing well after each addition. Incorporate lemon juice.
  5. Gradually add half the flour mixture followed by whole milk; mix until combined. Add the remaining flour until no streaks remain.
  6. Pour batter into prepared loaf pan and bake for 50–60 minutes or until golden brown.
  7. Cool in the pan for 15 minutes before transferring to a wire rack.
  8. For the glaze, whisk powdered sugar, milk, and lavender extract until smooth; drizzle over cooled cake.
