  • 1/2 cup boiling water
  • 1/2 cup granulated sugar
  • 1/4 cup lemon juice
  • 1 1/2 cups tonic water (not diet)
  • 1/2 cup lemon juice (additional)
  • Lemon twists for garnish

Instructions

  1. In a mixing bowl, whisk together boiling water and granulated sugar until dissolved.
  2. Stir in both portions of lemon juice and tonic water until well mixed.
  3. Pour mixture into a 9×13-inch metal pan and freeze for about 30 minutes.
  4. Scrape the mixture with a fork to break up ice crystals; return to freezer.
  5. Repeat scraping every 30 minutes for about two hours or until slushy consistency is reached.
  6. Serve in chilled glasses garnished with lemon twists.
