  • 1 shallot (diced)
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon chopped fresh rosemary
  • 3 cloves garlic (minced)
  • 2 teaspoons Dijon mustard
  • 2 pounds boneless, skinless chicken thighs (cut into 1-inch chunks)
  • 1 red onion (cut into 1½-inch pieces)

Instructions

  1. In a medium bowl, mix together 2 tablespoons of olive oil, diced shallot, lemon juice, lemon zest, chopped rosemary, minced garlic, Dijon mustard, salt, and pepper.
  2. Place the chicken pieces in a gallon-size Ziploc bag or a large bowl and add the marinade. Ensure all pieces are well-coated and marinate for at least 2 hours or overnight in the refrigerator.
  3. Preheat your grill to medium heat. Thread marinated chicken and red onion onto skewers.
  4. Grill the kabobs for about 10 minutes, turning occasionally until cooked through and reaching an internal temperature of 165°F.
  5. Serve immediately with your choice of sides.
