  • 200 g Caster sugar
  • 4 medium Eggs (room temperature)
  • 50 g Unsalted butter (room temperature)
  • 2 tbsp Icing sugar (for dusting)

Instructions

  1. Preheat oven to 190°C (375°F). Roll out the shortcrust pastry and cut circles for your tartlet tins or muffin tray.
  2. Press the pastry into tins, prick the bases, and bake for 10-12 minutes until lightly golden. Let cool.
  3. In a bowl, whisk together lemon juice, zest, sugar, eggs, and butter until smooth. Cook in a saucepan over low heat until thickened.
  4. Fill cooled pastry shells with lemon curd and refrigerate for at least one hour.
  5. Dust with icing sugar before serving.
