  • 1 English cucumber, diced
  • 1/2 red onion, finely diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice (from about 2 lemons)
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, finely minced
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (freshly ground, or to taste)

Instructions

  1. In a large mixing bowl, combine diced cucumber, halved cherry tomatoes, finely diced red onion, and chopped fresh parsley.
  2. Add rinsed and drained chickpeas to the bowl.
  3. In a small bowl, whisk together extra virgin olive oil, fresh lemon juice, Dijon mustard, minced garlic, salt, and pepper.
