  • 1/2 cup unsalted butter (melted)
  • 1 1/2 cups sugar
  • Zest of 1 lemon
  • 1 egg + 2 egg yolks
  • 1 tablespoon lemon juice
  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon fine sea salt
  • 3/4 cup powdered sugar
  • 1 1/2 tablespoon lemon juice
  • Zest of 1/2 a lemon

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper.
  2. In a medium bowl, mix melted butter, sugar, and lemon zest until combined.
  3. Whisk in the whole egg and two egg yolks until smooth. Add lemon juice and mix well.
  4. Gently fold in flour, baking powder, and salt until just incorporated.
  5. Spread the batter evenly in the prepared pan and bake for 25-27 minutes or until edges turn golden brown.
  6. Allow to cool slightly before placing in the freezer for easy cutting into squares.
  7. For the glaze, whisk powdered sugar with lemon juice and zest, then pour over cooled brownies.
