  • 1/2 cup (113 grams) unsalted butter
  • 1/2 cup (100 grams) granulated sugar
  • 1 cup (92 grams) rolled oats
  • 1/4 cup (31 grams) all-purpose flour or whole wheat pastry flour
  • 4 large eggs
  • 1/2 cup (160 grams) honey
  • 1 tablespoon lemon zest
  • 1/2 cup (120 ml) freshly squeezed lemon juice
  • 1/4 cup (31 grams) all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together unsalted butter and granulated sugar until light and fluffy. Stir in rolled oats and flour until well combined. Press firmly into the bottom of a greased baking dish.
  3. Bake the crust for about 15 minutes until lightly golden.
  4. In another bowl, whisk together eggs, honey, lemon zest, and freshly squeezed lemon juice. Gradually mix in remaining flour until smooth.
  5. Pour the filling over the pre-baked crust and return to the oven for an additional 20-25 minutes or until set.
  6. Allow to cool completely before slicing into squares.
