  • 1 pound ground beef
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 (15-ounce) can diced tomatoes
  • 1 (15-ounce) can tomato sauce
  • 4 cups chicken broth
  • 8 ounces bowtie pasta
  • ½ cup ricotta cheese
  • 2 ounces mozzarella cheese, shredded
  • ¼ cup Parmesan cheese, shaved, shredded, or freshly grated
  • ¼ cup fresh parsley, chopped
  • 12 tablespoons olive oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon sea salt, or to taste
  • Black pepper, to taste
  • 12 cups water, to adjust soup consistency

Instructions

  1. In a large soup pot over medium-high heat, add olive oil and sauté ground beef, onion, and garlic until browned.
  2. Stir in diced tomatoes, tomato sauce, chicken broth, Italian seasoning, sea salt, and black pepper.
  3. Add uncooked pasta and bring to a boil. Then reduce heat and simmer for 10–15 minutes until pasta is tender.
  4. Adjust consistency with water or broth as needed.
  5. Stir in cheeses before serving and garnish with fresh parsley.
