  • 2 hard-boiled eggs (cut into bite-sized pieces)
  • ½ English cucumber (thinly sliced)
  • ¼ cup corn
  • ¼ cup carrots (diced)
  • ¼ cup apple (diced)
  • â…“ cup mayonnaise
  • 1½ teaspoons rice apple vinegar
  • 1 teaspoon sugar
  • Salt and black pepper to taste

Instructions

  1. Toss cucumber slices with salt and let them sit for 10 minutes. Squeeze out excess moisture.
  2. Boil potatoes in salted water until fork-tender (about 15 minutes). Add diced carrots for the last 3 minutes of cooking. Drain well.
  3. In a mixing bowl, combine boiled potatoes, carrots, cucumber, corn, diced apples, and hard-boiled eggs.
  4. In another bowl, whisk together mayonnaise, rice apple vinegar, sugar, salt, and black pepper until smooth.
  5. Pour the dressing over the potato mixture and gently toss until everything is well coated.
