  • 1/3 cup monk fruit blend sweetener
  • 1 teaspoon lemon juice
  • 1 cup heavy cream
  • 7 oz sugar-free chocolate

Instructions

  1. In a medium bowl, mix cream cheese, monk fruit sweetener, and lemon juice until smooth.
  2. In another bowl, whip heavy cream until stiff peaks form.
  3. Fold one-third of the whipped cream into the cream cheese mixture gently. Then fold in the remaining whipped cream.
  4. Scoop out 1-inch balls of the mixture and place them on a parchment-lined tray. Freeze for 1-2 hours or overnight.
  5. Melt the sugar-free chocolate in a microwave-safe bowl.
  6. Dip each frozen ball into the melted chocolate and return to the tray to cool. Freeze again if necessary.
