  • 12 oz fresh raspberries
  • 2 large fresh mangoes, cubed
  • 1 lb fresh strawberries, cubed
  • 1 lb green grapes, halved
  • 1 lb red grapes, halved
  • 4 cups apple juice
  • 4 packets unflavored vegan gelatin
  • 3 tablespoons granulated sugar
  • 1 tablespoon lemon juice

Instructions

  1. Begin by washing and preparing all fruits. Lightly spray a bundt pan with pan spray.
  2. In a medium bowl, combine 1 cup of apple juice with vegan gelatin; set aside. In a small saucepan, boil the remaining apple juice with sugar and lemon juice, then pour over the gelatin mixture and whisk until dissolved.
  3. Layer the prepared fruits in the bundt pan: start with raspberries, then add mangoes, strawberries, green grapes, and red grapes.
  4. Pour the cooled jello mixture over the layered fruits until fully covered.
  5. Refrigerate for about 3-4 hours or until set. To unmold, dip the bundt pan briefly in hot water and invert onto a serving plate.
