Instructions

  1. In a mixing bowl, combine warm water and sugar, stirring until dissolved. Sprinkle yeast over the mixture and let it sit until frothy (5–10 minutes).
  2. In another bowl, whisk together bread flour, all-purpose flour, and salt.
  3. Make a well in the dry ingredients, add the yeast mixture and olive oil, then mix until a dough forms.
  4. Knead the dough on a floured surface for 5–7 minutes until smooth and elastic.
  5. Place in a greased bowl, cover with a kitchen towel, and let rise in a warm area until doubled in size (about 1 hour).
  6. Preheat oven to 375°F (190°C). Punch down risen dough and transfer it to a greased baking sheet; stretch to fit pan and let rise again (30 minutes).
  7. Create dimples in the dough before spreading raspberry preserves on top.
  8. Bake for approximately 22 minutes until golden brown.
  9. Mix confectioners' sugar with enough milk to achieve desired glaze consistency; drizzle over warm focaccia before slicing.
