  • 2 bottles (750 ml each) high-proof lemon juice
  • 4 cups sugar
  • 5 cups filtered water

Instructions

  1. Wash the lemons thoroughly and zest them carefully using a zester or grater, avoiding the white pith.
  2. Combine the lemon zest and high-proof lemon juice in a large glass jar. Seal tightly and allow to infuse in a cool, dark place for 10 days, shaking gently every few days.
  3. Prepare simple syrup by dissolving 4 cups of sugar in 5 cups of water over medium heat. Let it cool completely.
  4. After 10 days, strain the lemon infusion through a fine mesh sieve into another container to remove zest pieces.
  5. Mix in the cooled simple syrup until well combined.
  6. Using a funnel, pour your limoncello into clean bottles, seal tightly, and refrigerate for at least one day before serving.
