  • 14 oz pasta (rotini or penne)
  • 1 large cucumber
  • 18 oz cherry tomatoes
  • 3/4 cup olives (Kalamata preferred)
  • 5 oz feta cheese
  • 1/2 red onion
  • 1/4 cup fresh parsley
  • 1/3 cup olive oil
  • 4 tbsp red apple vinegar
  • 1 tbsp lemon juice
  • 2 tsp oregano
  • 1 tsp honey
  • 3 garlic cloves
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 1/4 tsp red pepper flakes

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. Slice the cucumber into half-moons and chop the cherry tomatoes and red onion.
  3. In a bowl, whisk together olive oil, apple cider vinegar, lemon juice, oregano, honey, minced garlic, pepper, salt, and red pepper flakes.
  4. In a large mixing bowl, combine cooled pasta with cucumber, tomatoes, olives, feta cheese, red onion, and parsley.
  5. Pour the dressing over the salad and toss gently to coat.
  6. Chill in the refrigerator for at least 15 minutes before serving.
