  • 1 cup of water
  • 1/2 cup of vegetable oil
  • 3 large eggs
  • 1 can (14 oz) of sweetened condensed milk
  • 1 cup of semisweet chocolate chips
  • 1 teaspoon of vanilla extract (optional)
  • 1/2 cup of chopped walnuts or pecans (optional)
  • Extra pecans or coconut for garnish
  • Chocolate shavings for garnish
  • Fresh mint leaves for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the cake mix, water, vegetable oil, and eggs. Mix on medium speed for 2 minutes.
  3. Pour the batter into a greased 9×13 inch baking pan and bake for 30-35 minutes until a toothpick comes out clean. Cool for at least 20 minutes.
  4. Poke holes in the cooled cake using a wooden spoon handle.
  5. Pour sweetened condensed milk over the holes evenly.
  6. For the frosting: In a saucepan over medium heat, mix evaporated milk, sugar, egg yolks, and butter until thickened. Remove from heat and stir in coconut and pecans.
  7. Frost the cake once slightly cooled and chill in the refrigerator for at least 2 hours before serving.
