  • 1 cup dried pinto beans
  • 8 cups water
  • 1/4 cup unsalted butter (divided)
  • 1 small onion (finely minced)
  • 2 cloves garlic (finely minced)
  • 2 teaspoons salt
  • 1 teaspoon brown sugar
  • 1 teaspoon ground cumin
  • 1 teaspoon chipotle chile powder
  • 2 cups shredded cheese (Monterey Jack or Queso Panela)
  • 1 tablespoon lime juice
  • Chopped cilantro for garnish

Instructions

  1. Rinse and sort the dried pinto beans. Add them to the Instant Pot along with 8 cups of water and one scoop of lard.
  2. Close the lid and set to pressure cook on high for 40 minutes. Allow natural release for 20 minutes before venting.
  3. Reserve 1.5 cups of cooking liquid, then drain the beans.
  4. In a large skillet, melt 2 tablespoons of butter over medium-high heat and sauté onions until soft.
  5. Add garlic, salt, brown sugar, cumin, and chipotle powder; cook until fragrant.
  6. Stir in the drained beans and reserved cooking liquid, simmering briefly.
  7. Mash the mixture to your desired consistency; add more reserved liquid for creaminess.
  8. Mix in lime juice, remaining butter, and one cup of cheese; top with additional cheese and broil until melted.
