  • 1 tablespoon oil
  • 1 pound boneless, skinless chicken breast (diced)
  • Salt & pepper to taste
  • 1 onion (cut into thin wedges)
  • 1 can (8 oz) pineapple chunks or tidbits packed in juice
  • 1/2 cup BBQ sauce
  • 1 red pepper (diced)
  • 1 yellow pepper (diced)
  • 1 cup white rice
  • 1 cup water
  • 1 teaspoon oil
  • 1/4 teaspoon salt
  • 1/2 cup BBQ sauce (for finishing)
  • 2 teaspoons cornstarch
  • 2 tablespoons water

Instructions

  1. Set Instant Pot to sauté mode; add oil and diced chicken seasoned with salt and pepper. Brown for about 5–7 minutes. Add onion and stir for another minute.
  2. Mix in pineapple (with juice), BBQ sauce, and diced peppers. Stir well.
  3. Place a trivet over the mixture; in an oven-proof dish, combine rice with water, oil, and salt. Place this on top of the trivet.
  4. Close the lid and set to pressure cook on high for two minutes. Allow natural release for ten minutes before manually releasing remaining pressure.
  5. Remove the rice dish and trivet; fluff rice with a fork. Combine remaining BBQ sauce with cornstarch and water; stir into pot until thickened.
  6. Serve chicken over rice.
