  • 1.5 cups diced onions
  • 1 cup diced carrots
  • 1 cup diced celery
  • 5 cloves garlic, minced
  • 3 cups shredded cheddar cheese
  • 2 cups heavy whipping cream
  • 2 tablespoons salted butter
  • Salt and pepper to taste

Instructions

  1. Select sauté mode on the Instant Pot and melt the butter. Add onions, carrots, and celery, cooking for about 5 minutes until softened. Turn off sauté mode.
  2. Stir in chopped broccoli and add 2 cups of water. Secure the lid and set to high pressure for 5 minutes; then quickly release the pressure.
  3. Select sauté mode again, stir in heavy whipping cream and minced garlic, then gradually add shredded cheddar cheese until melted.
  4. Season with salt and pepper to taste before serving.
