  • 2 cups Fresh Strawberries
  • 8 ounces Dark Chocolate
  • 2 tablespoons Coconut Oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In one bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix buttermilk, vegetable oil, eggs, and vanilla until smooth.
  4. Combine wet and dry ingredients; stir in boiling water until well mixed.
  5. Pour batter into the prepared pan and bake for about 30–35 minutes or until tested clean with a toothpick.
  6. While cooling, prepare the strawberry filling by mixing chopped strawberries with lemon juice.
  7. Melt dark chocolate with coconut oil; pour over cooled cake after assembling layers with strawberry filling.
