  • 2 tablespoons white sugar

  • 3 tablespoons melted and cooled salted butter
  • 1/2 cup unsalted butter, softened
  • 1/2 cup white sugar, plus a bit more for rolling
  • 1/4 cup tightly packed light brown sugar
  • 1 teaspoon vanilla essence
  • 1 large egg
  • 1 1/3 cups plus 1 tablespoon plain flour
  • 1/2 teaspoon bicarbonate of soda
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup icing sugar
  • 1/4 teaspoon vanilla essence
  • 1 tablespoon heavy cream
  • Milk to adjust to a thick, opaque white glaze consistency

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a baking sheet lined with parchment paper.
  2. In a mixing bowl, combine chopped strawberries with white sugar, corn starch, and lemon juice. Set aside.
  3. In another bowl, whisk together plain flour, bicarbonate of soda, baking soda, and salt.
  4. In a large mixing bowl, cream together softened unsalted butter with white sugar and brown sugar until light and fluffy. Mix in vanilla essence followed by the egg until well combined.
  5. Gradually add the flour mixture until just combined; be careful not to overmix. Gently fold in the prepared strawberries.
  6. Form small balls of cookie dough about two inches apart on the prepared baking sheet. Roll each ball in additional white sugar before placing it on the sheet for added sweetness.
  7. Bake in preheated oven for 10-12 minutes or until edges are lightly golden.
  8. In a small bowl, mix icing sugar with vanilla essence and heavy cream. Add milk gradually until you reach your desired glaze consistency.
  9. Once cookies have cooled, drizzle or spread the glaze over each cookie before serving.
