  • 1 tablespoon barley malt syrup or light brown sugar
  • 1 1/2 cups warm water
  • 5 cups all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 2 tablespoons food-grade lye (for bath)
  • Coarse salt for finishing

Instructions

  1. Preheat your oven to 400°F and line baking sheets with parchment paper.
  2. In a mixing bowl, combine warm water, yeast, and barley malt syrup. Let sit for 5 minutes until foamy.
  3. Gradually add flour and sea salt, mixing until a dough forms.
  4. Knead on a floured surface for about 5 minutes until smooth and elastic.
  5. Place in a greased bowl, cover, and let rise in a warm spot for about 30 minutes until doubled in size.
  6. Punch down the risen dough and divide into 10 equal pieces. Roll each piece into long ropes and shape into pretzels.
  7. Prepare the lye bath by mixing lye with room temperature water in a large bowl (handle with care).
  8. Dip each shaped pretzel into the lye bath briefly before placing on baking sheets.
  9. Sprinkle with coarse salt and bake for about 16 minutes or until golden brown.
