  • 2 qt water
  • 1/2 tsp salt
  • 1 lb orzo
  • 1/2 lb kalamata olives, pitted and chopped
  • 1/2 cup chopped red onion
  • 12 oz sun-dried tomatoes in oil, drained and diced
  • 1 cup spinach, sliced thin
  • 3 tbsp fresh basil, thinly cut
  • 3 tbsp fresh mint, thin strips
  • 1/2 tsp black pepper, ground
  • 3 tbsp extra-virgin olive oil
  • 3 tbsp fresh lemon juice
  • Zest from 1 lemon, grated
  • 1/3 lb feta cheese, crumbled

Instructions

  1. In a large pot, bring 2 quarts of water to a rolling boil.
  2. Add 1/2 teaspoon salt to the boiling water.
  3. Stir in 1 pound of orzo pasta.
  4. Cook according to package instructions until al dente (about 8–10 minutes).
  5. Once cooked, drain the orzo using a colander.
  6. While the pasta cooks, chop your vegetables: Pit and chop 1/2 pound of kalamata olives, dice 12 ounces of sun-dried tomatoes, thinly slice 1 cup of spinach, and chop 1/2 cup of red onion.
  7. In a large mixing bowl, combine the drained orzo with all prepared ingredients: Olives, Sun-dried tomatoes, Spinach, Red onion.
  8. Add fresh herbs (basil and mint) into the mixing bowl.
  9. Sprinkle in ground black pepper (1/2 teaspoon).
  10. In a small bowl, whisk together: Extra-virgin olive oil (3 tablespoons), Fresh lemon juice (3 tablespoons), Lemon zest from one lemon.
  11. Pour the dressing over your salad mixture.
  12. Gently toss until everything is well coated.
  13. Lastly, crumble in feta cheese (about 1/3 pound), mixing gently to combine.
