  • 1 packet instant yeast (2 teaspoons)
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter (room temperature)
  • 3 cups all-purpose flour
  • 1/2 cup unsalted butter (chilled and sliced)
  • 1 whole egg (for egg wash)
  • 2 tablespoons milk (for egg wash)

Instructions

  1. Activate the yeast by combining warmed milk, instant yeast, and sugar. Let sit until frothy (5-10 minutes).
  2. In a bowl, whisk together flour and salt. Make a well in the center; add yeast mixture and room temperature butter. Mix until a rough dough forms.
  3. Knead on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover with plastic wrap, and let rise for about 1 hour or until doubled.
  4. Prepare the chilled butter layer between parchment paper; pound into a rectangle and refrigerate.
  5. Roll out dough into a rectangle. Place chilled butter in the center, fold over, seal edges, roll out again, fold into thirds, refrigerate for 30 minutes. Repeat twice more.
  6. Roll dough to about 1/4 inch thick; cut into triangles. Roll each triangle tightly from the base to tip.
  7. Place on a baking sheet lined with parchment paper, tips tucked underneath. Let proof for about an hour.
  8. Preheat oven to 400°F (200°C). Whisk egg and milk for egg wash; brush over croissants.
  9. Bake for 15-20 minutes until golden brown.
