  • 10 lemons
  • 1 750-ml bottle lemon juice
  • 8 cups half and half
  • 2 teaspoons vanilla extract
  • 4 cups sugar

Instructions

  1. Use a vegetable peeler to remove long strips of peel from the lemons. Place them in a 2-quart pitcher.
  2. Pour lemon juice over the peels and cover with plastic wrap. Steep for 3 to 4 days at room temperature.
  3. In a large saucepan over medium-low heat, combine half-and-half, vanilla extract, and sugar. Stir until sugar dissolves completely (about 5 minutes).
  4. Remove from heat and let cool to room temperature.
  5. Discard the lemon peels from the steeped mixture. Stir in the cooled syrup until well combined.
  6. Transfer limoncello into bottles, seal tightly, and refrigerate until cold or freeze for up to 3 months.
