  • 2 peeled and chopped carrots
  • 2 minced garlic cloves

  • 28 oz can crushed San Marzano tomatoes
  • 4 cups chicken stock
  • 1/4 cup heavy cream
  • 1 cup cooked gluten-free orzo (approximately 1/2 cup uncooked)
  • 1/4 cup torn fresh basil leaves (or 1 tablespoon dried if necessary)
  • Salt and black pepper, to taste

Instructions

  1. In a large pot over medium heat, heat olive oil and sauté chopped onion until translucent. Add carrots and minced garlic; cook until softened.
  2. Stir in crushed red pepper and crushed tomatoes; cook for 5 minutes.
  3. Pour in chicken stock and bring to a gentle boil. Reduce heat to low and simmer for 20 minutes.
  4. Stir in heavy cream and cooked orzo until heated through. Season with salt and black pepper.
  5. Finish with torn fresh basil leaves before serving.
