- 2 cups pitted castelvetrano olives (with brine)
- 1/2 cup packed fresh parsley
- 2 tablespoons fresh chopped dill
- 1/2 cup packed fresh basil
- 2–3 medium garlic cloves
- 6 tablespoons extra virgin olive oil
- Salt and pepper to taste
- In a food processor, combine the olives and 6 tablespoons of their brine.
- Add the parsley, dill, basil, garlic, and olive oil. Season with salt and pepper.
- Blend until smooth, stopping to scrape down the sides if necessary.
- Taste and adjust seasoning as needed.
