  • 2 cups pitted castelvetrano olives (with brine)
  • 1/2 cup packed fresh parsley
  • 2 tablespoons fresh chopped dill
  • 1/2 cup packed fresh basil
  • 23 medium garlic cloves
  • 6 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a food processor, combine the olives and 6 tablespoons of their brine.
  2. Add the parsley, dill, basil, garlic, and olive oil. Season with salt and pepper.
  3. Blend until smooth, stopping to scrape down the sides if necessary.
  4. Taste and adjust seasoning as needed.
  5. Serve over cooked pasta, use as a spread on bread, or enjoy as a dip.
