  • 3 cups cooked pasta (rotini or penne)
  • 1 ½ cups cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red bell pepper, diced
  • ½ cup red onion, thinly sliced
  • ¾ cup kalamata olives, sliced
  • 1 cup feta cheese, crumbled
  • ¼ cup fresh parsley, chopped
  • ¼ cup olive oil
  • 2 tablespoons red apple vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Juice of half a lemon

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a small bowl, whisk together olive oil, red apple vinegar, Dijon mustard, oregano, garlic powder, salt, black pepper, and lemon juice to make the dressing.
  3. In a large mixing bowl, combine the cooked pasta with cherry tomatoes, cucumber, red bell pepper, red onion, kalamata olives, and feta cheese.
  4. Pour the dressing over the salad mixture and toss until everything is well coated.
  5. Sprinkle with fresh parsley and chill in the refrigerator for at least 30 minutes before serving.
