  • 300g uncooked orzo pasta
  • 150g baby plum tomatoes (halved)
  • 100g feta cheese (cubed)
  • 100g Kalamata olives (halved)
  • 75g green pepper (finely diced)
  • 75g cucumber (sliced)
  • 80ml extra virgin olive oil
  • 3 tbsp red apple vinegar
  • 1 small bunch fresh parsley (finely diced)
  • 1 heaped tsp dried oregano
  • 1/4 tsp EACH: salt, black pepper
  • 1 small clove of garlic (very finely diced)
  • 1/2 lemon (juice only)

Instructions

  1. Prepare the Dressing: In a large bowl, whisk together olive oil, red apple vinegar, parsley, oregano, salt, and pepper. Stir in tomatoes, feta cheese, olives, red onion, and garlic. Let marinate for at least one hour.
  2. Cook the Orzo: Boil salted water in a pot; add orzo and cook until al dente. Drain and rinse under cold water.
  3. Combine Ingredients: Mix cooled orzo into the dressing mixture along with green pepper and cucumber.
  4. Final Touches: Squeeze lemon juice over the salad; adjust seasoning if needed.
