  • 4 large tomatoes
  • 4 large bell peppers
  • 1 cup rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • Salt and pepper to taste
  • 1 cup water

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Cut the tops off the tomatoes and peppers, then scoop out the insides.
  3. In a pan, heat olive oil over medium heat; sauté onion and garlic until soft.
  4. Stir in rice, parsley, mint, salt, and pepper; cook for a few minutes.
  5. Add water and vegetable insides; cook until rice is half done.
  6. Stuff each tomato and pepper generously with the rice mixture.
  7. Place them in a baking dish; cover with tops and drizzle with olive oil.
  8. Bake for about 1 hour or until vegetables are tender.
